Ricotta Zeppole

These are so crispy, light, and delicious, you'd better plan on making 2-3 piece per guest, as they are irresistible! Just a few ingredients, and super easy to make. Everyone loves fried dough!

ingredients

1 pound ricotta, drained in a mesh strainer overnight if watery

10 ounces cake flour

7 ounces sugar

pinch of salt

1 ½ teaspoons, or 7 grams baking powder

½ cup heavy cream

¼ teaspoon vanilla extract

1 teaspoon orange zest

1 egg white

Method

pre-heat oil to 350 degrees

  1. Combine all ingredients except egg white in order in an electric mixer fitted with a paddle until smooth.
  2. Add the egg white. Stir to combine.
  3. Form batter with spoons or a small ice cream scoop and fry in hot oil until golden brown and cooked through.
  4. Drain on paper towels and dust with powdered sugar.

**Note: Make sure you use “cake flour” for this recipe. The ONLY suitable substitute is   “pastry flour”.  If you look up substitutes for cake flour, you will find “all purpose flour” as a substitute. It is NOT a suitable substitute, the zeppole will be like led zeppelins!
